One of my latest obsessions is pie. Seeing it. Smelling it. Eating it. Learning to make it. Though I'm not a full-time homemaker, I want to be the best that I can be in the small amount of time available for the "home arts" each day. So, there was a tiny bit of shame lurking in my heart that I didn't know how to make a flaky, crispy pie crust from scratch. I needed to rely on Pillsbury to pick up the slack. Plus, making a crust just seems intimidating (thank you very much, Martha!). I could never claim a pie, sweet or savory, as mine. Until now.
Meet Shaker Lemon Pie. Top to bottom, six ingredients. Top to bottom, delicious.
One reason I love the library is that I can try before I buy. I checked out a cookbook simply titled "Pie Pie Pie" by John Phillip Carroll. I was confused about what it might be about but I quickly figured things out :) Long story short, I'll be buying this baby for my collection. I won't write out the recipe here but my family likes it. I'd say love it but to get to that level of enjoyment, you have to appreciate the sharpness in flavor and chewy texture encased in sweet that is marmalade. And marmalade ain't for everyone. I'd describe the filling as a cross between marmalade and lemon curd, like eating lemonade. Lemon, sugar, eggs. That's it.
And the crust. The crust. I can say my family loves it because, by the end of the day, the edges of the crust had been broken off and snacked on. And if that's not love, I don't know what is. I can finally kick out that shame that had been lurking in the shadows and proclaim to the world that "This is my pie!!"

Oh Andrea, that looks soooo good! I would love the recipe, I'm a HUGE fan of lemon pie. The crust does look tricky, I don't know if I'd be brave enough to give it a try. I'm glad you're blogging again!
