When sweet teeth attack...

I decided to experiment with some stuff that I had hanging out in the fridge and pantry as part of the self-imposed Pantry Challenge. Fortunately, I had pulled this recipe out of Real Simple magazine last month. All I can say is how happy I am, after spending days curled in a ball, weeping, after Whole Foods pulled their chocolate pudding off the shelves, to have found this more than adequate substitute. Yum!




Pots de Chocolate

2/3 cup sugar
2 tbsps cornstarch
1/8 tsp salt
3 cups whole milk
4 egg yolks
1/2 tsp pure vanilla extract
6 ounces bitter-sweet chocolate, chopped
cocoa powder, to garnish

Mix together the sugar, cornstarch, and salt in a medium saucepan. Add 1/3 cup of the milk, stirring to form a smooth paste. Whisk in the remaining milk and the egg yolks.

Cook the pudding over med-low heat, stirring constantly with a wooden spoon or spatula until thickened, about 15 minutes.

Remove from heat. Add the vanilla and the chocolate, stirring until the chocolate is melted and the mixture is smooth. Pour into cups (8 small or 4 big. Guess which I chose!). Refrigerate until well chilled. Sprinkle with cocoa.

Refrain from pigging out on entire pan and try to share.
