You just gotta try it!

Day 29 of our pantry challenge and i still can't see the back of the freezer or my main pantry. Regardless, we're purchasing some fresh fruits this weekend and every week while still whittling down my very sizable, well stocked food storage while spending half of our usual grocery budget. I can't believe how well we've been eating. Granted, some nights (lazy ones) we tend to graze on things like cinnamon or peanut butter and honey toast. Even hummus with naan. On ambitious evenings, we have had gumbo made from scratch to pasta with browned butter, garlic and parsley. Which brings me to tonight. Feeling lazy but hungry I decided to use my go-to sauce, which I make off of the top of my head. I never got a recipe but it was served to me for my birthday. After almost an entire month of zero shopping the yumminess just keeps on coming. We had Jumbo Four Cheese Ravioli with Peas and Lime Cream Sauce!! So good! I located a recipe that's very close and I'm going to share it so everyone I love can enjoy, too. It goes on meats, pasta, veggies, couscous. Enjoy!

Lime Cream Sauce

2 tablespoons onions, chopped
2 tablespons shallots, chopped
1/2 cup dry white wine
1 1/2 cups chicken stock
1 cup heavy cream
2 tablespoons fresh lime juice
salt and pepper to taste

Saute onions and shallots in some butter until golden. Add wine and reduce to half. Add stock and reduce to half. Add cream and reduce to half or until desired thickness. Add lime juice. Seaon to taste.


Seriously, enjoy this sauce people.
